Harvest Apple Gallettes


Harvest Apple Galettes

(makes 4 Galettes)



1 ¾ cup flour

¼ stone ground cornmeal

1 T. sugar

1 t. kosher salt

14 T. ice-cold unsalted butter,

         cut into pieces

¼ cup ice water



4 apples, peeled and cut

        into inch size pieces

2/3 cup sugar

1 T. flour

1 t. cinnamon

1 t. nutmeg

1 t. ginger

¼ t. ground cloves

pinch of salt

juice of one lemon

1 T. unsalted butter


Start by making crust.  Pulse flour, cornmeal, sugar and salt in food processor until combined.  Add butter and pulse until pea sized.  Sprinkle in ice water; pulse until clumps form.  Transfer to bowl and knead to bring dough together.  Divide into four pieces.  Wrap each in plastic wrap; flatten each disc.  Chill in refrigerator for at least 30 minutes.


Make filling.  Combine apples sugar, flour, spices, salt and juice in bowl.


Pre-heat oven to 400 degrees.  Soften dough to room temperature for 10 minutes.  On a floured surface, roll disks to 8 inch diameter and ¼ inch thick.  Place 2 disks each on a cookie sheet lined with parchment paper.  Top with filling, leaving a 2 inch border all around.  Fold edges over, overlapping on top of each other all around.  Chill 30 minutes.


Brush crusts with water and sprinkle with additional sugar.  Dot with butter.  Bake 35 minutes, rotating sheets mid-way, until bubbly and golden.  Allow to set and cool a little before attempting to lift off of cookie sheet.  Place each one immediately on dessert plate.  Serve while still warm with ice cream or whipped cream sweetened with honey.
