Cranberry-Apple Stuffed Acorn Squash


This is a delicious side dish to chicken or that upcoming Thanksgiving dinner.  Just a tiny bit sweet, the cranberry-apple flavors pop in your mouth and give the squash a delightful taste.  Smells wonderful, too.  Enjoy!


2 medium acorn squash, halved               Cranberry apple acorn squash

1 cup cranberries

1 cup peeled, chopped apples

(2 small)

¼ cup brown sugar

3 tablespoons melted butter

grated orange peel from one orange


Pre-heat oven to 350 degrees.  Scoop out seeds from halved squashes.  Place squash cut side down in shallow baking pan that has been buttered.  Add ½ cup water to baking pan and bake 40 minutes.


Remove from oven, cool a little and turn cut side up.  In a bowl, mix well the chopped apples, cranberries, brown sugar, melted butter and orange peel.  Scoop stuffing mixture into squash halves and return to oven uncovered to bake another 30 minutes or until squash is tender when pierced.  Serve.
