Kale Soup



2 pounds fresh kale, cut in strips, stems included

8 cups chicken broth*

1 large onion, chopped

1 green pepper, or 2 hot peppers, or half and half, chopped

4-5 cloves of fresh garlic, chopped

6 potatoes, scrubbed and diced (leave peels on)

1 can kidney beans

1 pound turkey kielbasa or turkey choirzco*


*can use beef broth instead of chicken broth, but if so, then use beef or pork sausage.


Mix first five ingredients together in a large pot. Bring to a boil and then lower heat to simmer for three hours. Add the potatoes and meat and beans (rinse beans several times before adding to soup), and cook for 30 minutes more. Serve hot with corn bread or Johnny Cake.
